Cooking for Students: How to Make Greek Lentil Soup

This Greek lentil soup (also called Fakes Soupa) is a super healthy dish and it's pretty easy to make.

Serves 6

Prep Time 15 minutes
Cooking Time 60 minutes

Ingredients

  • 250g dry lentils
  • 400g tinned tomatoes
  • 1 litre stock (chicken, oxtail, doesn't matter!)
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 tablespoon olive oil
  • 3 garlic cloves, diced
  • 2 bay leaves
  • 2 tablespoons tomato paste
  • Salt, Pepper, spices
  • Vinegar for adding during serving
  • Feta if you’re feeling bougie

Instructions

  1. Prep onions, garlic, carrot
  2. Heat oil in pot
  3. Add a dash of chili flakes to oil
  4. When oil is hot enough, add onions and garlic. Saute for 2 minutes
  5. Add carrots. Saute for another 2 minutes
  6. Add lentils and tomatoes to pot and stir well
  7. Add water, stock, bay leaves and spices. Mix well
  8. Bring to the boil
  9. Simmer for about 40 minutes or until soft and thick.
  10. Serve topped with vinegar and crumbled feta
